Baked Banana Coconut Oatmeal

Yep, I love oats and I sure do love bananas. While this sounds like Basic Banana Porridge cooked in the oven, it’s actually more like Mini Banana Pancakes, but different, I swear.

Ingredients

  • 1 small overripe banana
  • 4-5 heaped tablespoons oats
  • 2 tablespoons desiccated coconut
  • 1 teaspoon honey
  • 1 egg
  • 1 tablespoon milk

Preheat oven to 180 degrees.

Mash banana. Whisk in egg. Add all other ingredients and combine.

Pour mixture into a ramekin, either lined with baking paper if you want to take the baked oatmeal out to eat like a cake or lightly greased if you want to eat it straight from the ramekin.

Bake for 25-30 minutes until golden brown, while still moist on the inside. This tastes beautiful on its own, but you could serve with a few spoons of coconut cream, sweetened yogurt or Nutella if you are feeling a bit indulgent.
